There are several different #7's. The Original Gold Foot was first, then came the Reserva #7 which was "aged for one year", finally they released the "Dry-Boxed #7" If you have the Dry boxed, I would age at least another 3 months. The darker Reserve #7's also need some time to smooth out. 3-4 months seems to be a good point to start smoking them. Before that the first 2" can be a bit rough.
