I'd been tempted to make one a while back, but never got around to it, and now I just can't justify the time/effort/money - the wife does pourover (chemex) and French Press, and I do Espresso. She just isn't that picky!
I have looked at those electric hot water kettles, but the one's I have found only have 3-4 setpoints that don't match up to my needs. (however in googling the term i came up with this good thread: http://www.clubstogie.com/vb/showthread.php?t=57351

That is a great thread! I'm sorry I've been away from the coffee forum for a while - life can get pretty hectic and take the magic out of many things on occasion, but enough of the reminiscing...

My thought for a PID Controlled Hotpot is to use a PID controller wired into the switch for a hotpot.

IT would only take a few things:

A PID Controller(they pop up on e-bay aplenty)
A Thermocouple that is compatible with said PID Controller

and a little willingness to do some creative wiring.

Basically, you would wire the PID Controller into the on/off circuit for the heating element in the Hotpot(some call them Electric Kettles), suspend the thermocouple below your intended waterline(and connect it to the PID), calibrate the PID to your desired Temp, then turn it on.

If wired/set up properly, heating the water to your desired temp is a set and forget proposition, the PID will 'pulse' the heating element to maintain the temp roughly where it is set.

Of course I am oversimplifying by quite a bit, but if pourover(or French Press) was still my primary means to prepare coffee, I'd have already created one!
