well this morning made it a full 7 days. Nice call Nova...big difference over the past 3 days or so. I don't get much special from the sip of this (it's good but now WOW) but the finish/aftertaste is making me nuts, in a good way. Ethiopian dry-process sidamo roasted just into 2c and rested for 4 days in the Behmor (bee-more)
Best Cup yet in the french press, rest reduces the bitterness shown at day 1.

Aged sumatra for french press and Kenya AA and Guatemalan for espresso. I think I've finally got the grind down for this blend. 2oz shot, loads of crema, 27 seconds, not bitter at all, very sweet and complex, awesome mouth-feel.

Guatemala Finca San Jose Ocana roasted to just before rolling 2nd crack (20 sec past VG 2nd crack). Rested 7 days - VERY buttery flavor and feel. Love the buttery aftertaste that lingers forever. Unfortunately I had my 2nd cup along with some DGT'd SG Kendal Cream Flake, which is very creamy on it's own. Put the two together and the finish is a little nauseating after a while.
