A word to the enrollees - you cannot back out once you sign up. The May Day Yirg Pass is not some gentlemanly cigar pass. Historically, it is rough-and-tumble hardball. If your yirg is really lame (like mine was last year) you may hear about it.

We need two more Men to wrap this thing up. When signup is done I'll arrange for sending out the beans to you, each and every one.

In the meantime, what is your roasting strategy? Last year my roasted beans smelled like something ethereal but, in the cup, it drank like Bisquick. I got a pass from WhoDat and his coffee was like a lemon blossom - incredible. His advice on how to accomplish this (in the 2006 thread) was very mysterious.

I am thinking about running some 4-ounce batches in a popper before breaking out the SCCO, then a three-four day rest, then a press brew. Gotta work fast on this if timing is going to be as tight as I expect.

I love it when someone sez, "Roast it to right before _____ happens." That just cracks me up. You gotta roast a bit of coffee to know what's happening right before something else happens. Like Tom's advice at Sweet Maria's:

Intensity/Prime Attribute: Medium to bold/ sweet tangerine/lemon citrus

Roast: Keep this out of 2nd crack as much as you can - I think Yirgs get weird if roasted into 2nd crack too much, although others like that. It's delicate notes are at their prime just before the coffee has any indication of 2nd crack.

Read this when I ordered my testing beans ... Hope to get them either today or tomorrow & do some testing over the weekend. God only knows what I'm gunna end up with on those first few batches. I've a 4 cup drip & a french press to try them out with.

BTW, Moo .... I've got a 1/2 lb of Hawaii Kona Blue Mtn. comming as well .... any tips for the clueless on roasting this one up ?? Also ordered some chickory to play around with ... never had it, but I've heared good things.
