We need two more Men to wrap this thing up. When signup is done I'll arrange for sending out the beans to you, each and every one.
In the meantime, what is your roasting strategy? Last year my roasted beans smelled like something ethereal but, in the cup, it drank like Bisquick. I got a pass from WhoDat and his coffee was like a lemon blossom - incredible. His advice on how to accomplish this (in the 2006 thread) was very mysterious. I am thinking about running some 4-ounce batches in a popper before breaking out the SCCO, then a three-four day rest, then a press brew. Gotta work fast on this if timing is going to be as tight as I expect. I love it when someone sez, "Roast it to right before _____ happens." That just cracks me up. You gotta roast a bit of coffee to know what's happening right before something else happens. Like Tom's advice at Sweet Maria's: Intensity/Prime Attribute: Medium to bold/ sweet tangerine/lemon citrus Roast: Keep this out of 2nd crack as much as you can - I think Yirgs get weird if roasted into 2nd crack too much, although others like that. It's delicate notes are at their prime just before the coffee has any indication of 2nd crack. Thanks Tom. Any other advice? I need all the help I can get.
