Different rest times for different roasts?
I was reading about rest times of home roasts. A comment got me thinking. The suggestion was that lighter roasts benefit from longer rest periods than darker ones. This makes some sense to me, but I was wondering what the rest of you roasters thought about this from your own experiences? If this has already been beaten like a dead horse, sue me...

I was looking for info on this last night. I usually let my beans set for at least 12 hours after roasting. Never experimented with different times.

One more thing regarding this, is anyone so geeked out that they have experimented with how long after the grinding of the beans you brew them? Does a little extra "de-gassing" time help or make no difference? I am thinking long the lines of really freshly roasted product, not the week old stuff.

Traditional wisdom sez 12-24 hour rest before you brew but my circumstances are not structured; sometimes I roast and brew immediately; mostly a roast is first brewed the next day (12-24 hours) out of convenience, not a plan to assure perfection.
I have observed that most of my espresso roasts do not begin to peak until at least 72 hours; regularly brewed coffee seems not to display the intense highs and lows of rested and "raw" espresso roast. I don't roast much past vanguard 2nd crack - oily beans are not (in) my bag. ~ [SIZE=4][SIZE=2]C[/SIZE]U[/SIZE]
