Merryvale 1997 Profile

My mother gave this to us a few years ago, stuck it away and forgot about it. I'm gonna do a standing rib roast for Christmas this year, and was wondering if anyone could comment on how it might pair up. The label on back reads :

"Profile is a blend of our best lots of Cabernet Sauvignon, Merlot, and Cabernet Franc, chosen for their depth of flavor and fine tannin structure. This wine was aged in new French oak chateau barrels and bottled unfiltered".

A little bit of it may find it's way to the sauce also.

Any comments, suggestions?

The '97 Merryvale Profile is a superior bottle of wine. Very good vintage and is probably more valuable now then when she purchased it. Retail on that thing was probably $100+ a few years ago.

In any event, it should match up well with a rib roast. Most "blended" wines arent huge in their structure, so it probably won't be as overpowering as a big cab or Chatuneuf Du Pape.......................for example.

In any event, enjoy, you've found yourself a special wine for Christmas!

BTW - Hope you didn't store it in a warm/hot environment.

Yum... rib roast. Me too.

The Merryvale is now selling between $110 - $170. It got a 97 rating in Wine Spectator.

I've had their lower end cabernets and they were excellent for the price ($20). Enjoy the moment when you take that first taste...
