I find they get better and loose some of the grassy flavor the have originally

The brown and reservas I've had with 2+ years on them are great--they come around nicely, edges smoothing off and increasing in complexity. I'd expect the red, white, and even Cabaiguans to all show improvement with time. Wouldn't say that for all other NCs, though. Hold on to those Tats for a while if you can.

I am not sure how anyone could know how these would age. They have only been around a couple of years. Wait another 5 years and see at that point. Age should be and is measured in years, not months.

Great point. I prefer to let my CC's age a bit and have been smoking a lot of the Tat's, Pepin's and Graycliff's fresh
