I used to ask this same question. (And got many of the same answers!)
After going through a lot of CCs (of many kinds) this year, and then trying to go back to NCs, I have found that CCs have a deeper, more defined flavor, and not difficult to pick out. In comparison, an NC's flavor is almost two-dimensional. I would also say that NCs tend to have a harshness to them that CCs don't.
