Pairing Apple Cider with a Cigar

I don't know about you, but I'm an apple cider fiend. Not the pasturized homoginized crap, I'm talking about the stuff that will turn to hard cider if you don't drink it quick enough.

So as I search for some of the good stuff in my new location, I'm hoping for some suggestions on what to smoke as I consume mass quantities of cider.

Thanks in advanced.

Dan

Let your cider harden then freeze it (preferably outside). The alcohol will not freeze and you can pour off what is sometimes called applejack. Delicious.

Careful about suggesting that, as it's not exactly legal in the US.

Wouldn't that fall under the same laws of brewing your own beer and making wine?

It would (those laws actually vary from state to state), but once you freeze it and poor off the alcohol, it becomes freeze distillation. That's where you run into problems.

Re: Pairing Apple Cider with a Cigar

Christ Jesus do I love hard cider. Strongbow is easily my favorite but rare over here in New York. Hornsby's is also a plus. I like cider pretty dry but it's not that common. Woodchuck has some good stuff, last night I bought their limited release Oak Aged. I expected a dark and dry cider, but it was actually pretty sweet. Not my fav.

I did not answer the question at all but I was just thrilled to see people discussing cider. Sorry.

It hasn't been distilled though so how would that make it illegal?Fermented yes distilled no!

Re: Pairing Apple Cider with a Cigar

From a winemaking recipe site:

Quote:
Early settlers made this by setting their apple cider outside in the winter and allowing it to become slushy. They would then skim the frozen water off of the surface, leaving a "hardened" cider behind. Commercially, it is now distilled. This is illegal for the home brewer, but the freezing method is effective.
That's a bit vague though now that i re-read it. Does the author mean that the distillation is illegal, or that everything he just described it illegal? I think he means the distillation itself, since the recipe is actually posted for the freezing process...Hmm.

Re: Pairing Apple Cider with a Cigar

Guys, distilling alcohol for consumption is illegal in the US. This includes freeze distillation. I can't believe how many people are arguing, I thought everyone knew moonshining was illegal.

Re: Pairing Apple Cider with a Cigar

I love Apple Cider and never even thought of pairing it with a stogie. I can't wait to try pairing them!
I can only find the pasteurized cider, does anyone know where I can pick up the unpasteurized kind in MD?
Maybe the Amish Market or something like that?

Re: Pairing Apple Cider with a Cigar

I might be mistaken but distilling booze for personal consumption is legal. You just have to pay the taxes.
