Well, I've hunted my share of squirrel. As small game go, hunting them is usually rather enjoyable, and they can be pretty fair eating, particularly the younger ones. Older ones can be a bit too gamey-tasting and tough. Yes, they look like large rats with bushy tails, but they aren't rats, just cousins! Rabbits are rodents as well, and you can find gourmet recipes for rabbit. Anyway, after watching Les Stroud on Survivorman, I must say that my opinion of what is and what is not edible has expanded somewhat.

I would say that squirrel is not quite in the same league taste-wise as quail, but significantly better than dove, IMO.

I don't mind them pan fried or even cooked over a camp fire, but like a lot of small game they do well as part of other things, like squirrel dumplings or camp stew. Many a country boy and many others as well are quite fond of squirrel gravy. Though I don't care for gravy, I am given to understand that my moms homemade buttermilk biscuits with squirrel gravy is outstanding.

As far as that squirrel melt, I have to admit I threw up in my mouth just a little bit. I'm thinking that some things should just be left simple. I hate mayo, too, so it was doubly unappealing to me.

I figured chukker was some kind of sport they practiced in South Africa and the Dutch East Indies... Seriously, I don't think they are native to my locale. There is a bar in Tuscaloosa called the Chukker, but it was not part of my regular rotation and I only visited it a few times.

Dove by itself is OK, just a touch gamey for me, even when brined. At least on a squirrel there are parts which, if not exactly white meat, come close.

Twice a year, for years during branding (spring and fall calves-brand twice a year on my place (since sold) and my wife's family's ranch. We did it the old fashioned way: rope and drag them to the branding area, brand, vaccinate, implant and cut the bull calves. The "oysters" mostly went in a bucket but we'd put some of the nuts on the cast iron branding iron heater (propane fired) to cook.

One year at the ranch in Valentine, NE, we had a young fella that wanted to do a photo shoot and was writing an article on ranching "the old way". He got along pretty good until the nut's started coming off. Then, when I put some nuts on the branding iron heater he asked what I was doing. I told him I was cooking up some breakfast. I guess he thougt I was joking until one of the cowboys came over to the fire and popped a done nut into his mouth. The photo guy got a funny look on his face and the next thing you know, he was on the ground. Didn't see much of him after that.

On the food channel the other day, there was a show with a VERY attractive female host, and she was in an establishment that was offering deep fried "oysters".
There was no denying it- she had to sample one, but like most women she just couldn't finish the job...

I haven't ever tried them. I would have to go with the breaded and deep fried recipe, right off the grill....I don't think so.

Turkey fries are really good.
