I usually avoid political discussions but this is a matter I have very strong opinions on. Thin-cut bacon is an affront to the very principles this country was founded on. I blame the French ..... and Alice Waters.

Once again I think you guys are missing the point.

Much like cuban cigars, robinson screw heads and thick cut bacon are only attractive because you don't have access.

Take it from me...a Canadian we know our bacon hell we even have bacon named after us.










Hope my plan to hoard all the cubans, sweet sweet bacon and screws that don't suck works

Home Made Bacon Brine.




I let this sit for 10 days in the fridge. It will smell something awsome in just a few days. I put it in a large rubbermaid container to shield it from the temp spikes of opening the door.




On day 10, I pull it out. Wash and dry it. And smoked it to 145* on the pit. Then put it back in the fridge to cool off before slicing it into "Bacon Steaks". The cooling off helps keep the fat juices inside the lean parts of the meat after it's cut.















Now stop all that whining.....
