Is there any data supporting your claim that tans fat is a known mutagen? Changing DNA=mutagenic. I was always under the impression that the real problem lies in the metabolism, or lack thereof, of dietary trans fat.

Trans fats can change the permeability of the cells allowing toxins and other undesirable substances into the cell, disrupting the DNA and the normal metabolic activity of the cell. Although the research on this was done with massive amounts of trans fats, more then what we are talking about here. Its not a huge effect either but, it does occur.

To get more info on Transfats and some better info. It might serve well to look at some of the publications related to it on the calorie Restriction websites or the Yahoo calorie restriction groups. Pubmed also publishes the most recent medical papers related to Transfat studies.
