How do YOU like your Barbecue???

Just finished a long conversation with a couple folks regarding the joys and pleasures of EASTERN North Carolina Barbecue? For those not initiated in the pleasures of EASTERN North Carolina Barbecue, it is coarse chopped pork with a smoky flavor and is not heavily sauced, but does have a great vinegar-based sauce that flavors the meat. When it comes to NC Barbecue, the "Cradle of Cue," families have been known to fight and split right down the middle whether you like vinegar-based or the tomato-based (any person that would give their kids tomato-based barbecue is liable to do anything to them).

I know that those from Memphis, Chicago, Kansas City, and of course Texas, all WEAKLY claim that THEY have the best barbecue...but, NOTHING compares to God's own EASTERN North Carolina Barbecue!

How do you like your barbecue....chopped, pulled, pork or beef, vinegar-based or tomato-based, or what other ways do you like your barbecue?

In case any of you from the North Country are wondering....Barbecue is something you eat in North Carolina...NOT something you Do!

Weigh in on your choice of barbecue...

HEY SQUID, NC BBQ SUCKS (kidding!)!!! I hate that vinegar based sauce crap!! I was crying for KC BBQ while I was in NC! Nothing compares to KC's smokey and spicey BBQ sauces! I also hate the way people steam their ribs... Rib meat ought to be torn from the bone, it should not fall off in a goopy mess! Kidding of course here, all BBQ is good, KC's is just gooder!
*edit* It's almost BBQ season, I smell BBQ bombs again...

Best ribs I have ever had were made by my dad when I was about 15 (and I helped.) We got some ribs from the butcher, and we made a tomato based sauce from scratch (I wish i knew what we put in it...it was fantastic) and threw it in the crockpot for several hours. I just remember tomato paste, mollases and grape jelly...I know there was more, but that was about 12 years ago.

These ribs were so tender you could have eaten them with straw. I need to call him up and ask for the recipie (but knowing my dad, there is no written recipie...he probably just pulled the recipie out of his @$$)

Wilbers on Rt 70 in Goldsboro! I used to work there. Best barbque in the world! Eastern NC barbque is the best in the world.

tomatoe based on pulled pork....is #2

ribs with a nice tomatoe sauce is number on....shouldnt be too tender tho, good bbq requires you to tear the meat off the bone and chew it

If it ain't pork, it really ain't barbecue. Best I've had was Hursey's and Huey's in Burlington, Stamey's in Greensboro, Joe's in Whiteville. Barbecue Festival in Lexington (that's in North Carolina) is legendary. I guess I can go both ways....

First off it ain't barbque if the meat ain't smoked, not of this boiling, crock potting, baking in the oven crap. Then it depends on what you smoked what to do next. For ribs a nice rub or a sauce, for a shoulder pull it or chop it and the vinegar based sauce with cole slaw on a nice burger roll. Now if you are doing brisket... hmmm, just smoke that sucker until it is ready to melt in your mouth...

Heck, somebody's got to stir the pot! Nancy Pelosi hasn't put her foot in her mouth for at least two days; Hillary Clinton hasn't been south of the Mason Dixon line since this past weekend where she tried her best to be crowned the first black wannabe President; and Ann Coulter hasn't had diarrhea of the mouth in a couple days....gotta do something to get this site jumping!

Just gotta let folks know the real reason behind the Civil War...it WAS all about BARBECUE! You history nuts ought to know that. Wasn't about slavery; wasn't about states rights....it was about BARBECUE!!!!

I wouldn't slag any BBQ I've had outside of Arthur Bryant's in KC, did_not_like_that.

For the most part BBQ around Oklahoma is tomoato based, and a fight between spicy and sweet. The best I ever had was an outdoor concert vendor at an Albert King show (RIP to the great man!). It was in a mobile cart that simply said "you need no teef to eat our beef". They weren't lying and it was fantastic.

That and Dougan's smoked brisket using Head Country sauce and rub
