Any music is fair game! If there's anything I'm more obsessive about than pipes and tobaccos, it's music.

Jazz - Coltrane, Cecil Taylor, Evan Parker, Sun Ra, et al

Dark Ambient - Lustmord, Hafler Trio, Nurse With Wound, Maurizio Bianchi, et al

Punk - Sex Pistols, Ramones, Flipper, Adicts, et al

Rock - Velvet Underground, Beatles, Stooges, Nirvana, et al

Blues - Muddy Waters, Howlin' Wolf, Little Walter, Son House et al

Modern Classical - Xenakis, Penderecki, Tod Dockstader, Gordon Mumma et al

Just no rap, hip-hop, or country.

Hell yeah, it counts! I'm doing the same but with guitar loops. Sort of a poor man's Frippertronics. Fun as hell and occasionally an interesting piece or fragment comes through and takes me in a different direction. I don't normally smoke a pipe when I do this but I do when I listen to the artists you mentioned. All good choices!

Ussually prefer the banter of the fellas I am smoking a pipe with(dont you agree Andrew). I rarely set down, just to smoke a pipe. I am usually doing something: tying flies, wood working, cleaning, reading. It all just depends on the surroundings. I do lean toward things that are a bit relaxing(ie no Pantera or GWAR).

I like lounge music and spanish guitar. Classical music is good too.

Thievery Corporation, Quantic, Dimitri from Paris, Harry Belafonte, Badi Assad, Paco de Lucia, Vincente Amigo, Asian Dub Foundation, Misty in Roots, Moby...Just some examples.
