Panama Carmen Estate 1800+ Meters

Got these little beauties from SM about a week ago. Nice looking beans with a fairly even size and shape to the best part of the batch. Roasted 1/2 lb on Sunday.



Roaster: WB 1500wt popper

Roast Amount: 3/4 cup beans

Roast Time: 5.75 min.

Target Roast: City +

Actual Roast: City + / Full City



These high altitude beans are great roasters. Roast very evenly and fairly quick; with relatively small amounts of chafe produced. Roasted to beyond first crack by 1 minute. After the conclusion of 1st crack; the roasting quickened tremendously and the vanguard of 2nd crack came within that 1 minute period. Almost too fast, but the beans progressed very even. Pulled, cooled, and set aside. Brewed some this morning.

This is a very bright cupping! Looks as good as it smells! Bright and acidic is the focal point early. Initial flavors are clean and fruity. Finish in very distinct but hard to describe. Nice. As the cup cools more fruit and nuttiness come out to play. The acidity subsides slightly, but is ever present. Excellent crispness and overall profile.

I have to give this coffee a high recommendation. A bit different than most Centrals I've had ... and in a good way. Give this one a try folks!

Carmen Estates have been a part of my personal stash for three years running. It is a great farm. With a 6 minute roast, let it rest a bit more. I think you're getting all acidity (brightness) upfront. Nothing wrong with that at all. You will get cocoa/nutty taste with slightly less acidity after a little more rest time.
